Pinned & Done: S’Mores Cupcakes

One of the first things I pinned when I started using Pinterest was a marshmallow-topped cupcake (it reminded me of a S’more). I really love cupcakes, so I’m always looking for fun new ways to bake them. I really like this method. You can see the pin on my “Baking, Cooking, Food” board.

Don’t
Because I wanted to make the cupcake a little more S’mores like, I played around with some chocolate chips and graham crackers. Two tips: (1) putting chocolate chips in the middle of the unbaked cupcake just makes the bottom of the cupcake slightly more chocolate-y, and (2) putting graham crackers in the middle of the unbaked cupcake just adds a layer of cardboard-like texture to the bottom of the cupcake. In other words, there is no need to mess with the cupcake itself.

Do
Use cute little graham crackers for the top (cute!)

Have a spoon ready for helping to squish down the marshmallow when you take it out of the oven

Do serve the cupcake as soon as they are cool. That way, the marshmallow is just a little crunchy, but not mushy which will happen if you leave them overnight.

Next Time
I think that the next time I make these cupcakes, I’m going to let the marshmallows cool and then dip the cupcake into melted dipping chocolate. Because I want it to have more chocolate!

Yes or No
These are definitely getting baked again in my home. Because chocolate, marshmallows and graham crackers are never wrong.
