Pinned and Done: Andes Mint Cupcakes

One of my favorite flavor combinations is mint and chocolate, so when I saw this cupcake recipe for Andes Mint Cupcakes, I knew I had to try it. Luckily, we had a gathering at the office for a big group of people coming up, so I had the perfect reason to bake them!

I took some shortcuts from the original recipe, solely because I ran out of time. The original recipe called for a chocolate mint ganache for a filling and to drizzle on top, but I didn’t do that step. I also used a box cake mix. Overall, I really liked this recipe (okay, basically just the icing, but still). I found the icing to be just a tad too peppermint-y, so next time I’ll probably cut the extract a bit. But they tasted good and looked great on the table. I’ll definitely make these again…and maybe try them with the filling and drizzle too!
